Ever since Veronica started elementary school in the fall, our mornings have been tight! We have to get out of the house early to be able to find parking at her school, to then take Adri to preschool. Because I appreciate my sleep, I’m often guilty of snoozing more than just a time or two. Luckily, with a little preparation, my breakfasts don’t suffer, and I can head out the door with a smart choice.
Taking an hour or so while Juli naps in the afternoons to prepare frozen smoothie packets is all it takes to set me up with breakfast for a couple weeks. Combining diced fruits with some Jif Creamy Peanut Butter and Dannon Vanilla All Natural Lowfat Yogurt makes for the perfect smooth and creamy combo.
I start by measuring and scooping the Dannon yogurt into the bottom of my plastic baggies. I love this yogurt, because it’s made with only natural ingredients. Since it’s delicious enough to enjoy on it’s own, it adds a nice hint of sweetness to the smoothie. Once you freeze it, it’s essentially fro-yo, and who doesn’t love that?!
Next comes the peanut butter. We typically have the gigantic twin packs of Jif from Walmart, because John loves to hang out on the couch with a jar and a spoon. Jif is also a great choice, because it’s non GMO and gluten-free, plus each serving has 7 grams of protein, to help fill you up!
The last step, is to add the fruit. Each bag gets a sliced banana for added creaminess, in addition to whatever fruits I happen to be hooked on. Usually it’s mango, for a nice tropical awakening, and I also chose papaya for that reason. I used to love getting papaya milkshakes back home, so having them so abundantly here has been a real treat.
And then it’s off to the freezer! After doing lots of freezer meals, I’ve learned that freezing each bag flat, helps save coveted freezer space. When ready to blend, a frozen bag and a cup of milk are all you need for a simple and filling breakfast! Dump your ingredients into your blender (this Oster® Blend-N-Go® MyBlend® is great if you don’t have a blender! You can just fill, blend & go) and blend until smooth!
